Eco-Sustainable Processing: Only the ripest cherries are meticulously hand-sorted and floated. At the La Pradera processing center, a 100% eco-friendly water recycling and natural filtration system is used, purifying water through specialized tanks and vetiver grass beds to protect the environment.

45-Hour Fermentation & Drying: The cherries undergo a precise 45-hour aerobic fermentation to highlight their rich, intrinsic flavors. Afterward, they are evenly dried on raised beds in a controlled greenhouse for 10 days, allowing the fruit's natural sugars to deeply permeate the beans.
